What happened
The photo on the recipe had a glossy dark top. Mine came out pale and soft, which I think means my oven runs cool. Nobody at this table cared. Posting it because the picture I was copying was never going to happen in my kitchen.

An oven thermometer sorted this out for me. Mine was forty degrees off.
